2 1/2 ripe bananas

1 ripe avocado

85g coconut sugar

120g GF rice flour

1 cup walnuts

200g dark DF chocolate (chopped roughly)

2 large eggs

60g coconut oil

40g rapeseed oil

pinch of salt


1) Whisk eggs, oils & sugar until well combined, the add in mashed avocado and banana

2) stir in remaining ingredients and combine well

3) bake in a greased brownie tray at 160 degrees for about 35 minutes (until the cake can 'hold' but isn't solid)

4) Take out of the oven and leave to cool. I prefer to serve this cold as it can be very rich when warm.
