1/2 cup dessicated coconut

1/2 cup polenta

1/2 cup flaxseeds

1/2 cup chia seeds

2 cups GF flour

salt and pepper

3 eggs

1 side of hake (filleted and skinned)


1) Prepare 3 bowls. In the first bowl, goes flour + salt and pepper. In your second bowl goes beaten egg. In your third bowl goes coconut, polenta, flaxseed and chia seeds.

2) Prepare your fish by checking for and removing any bones. Then cut into equal sized chunks. 

3) First coat the fish in flour, then the egg mixture, then the coconut/polenta/seed mixture - ensuring that the fish is properly coated in each mix. 

4) Once the fish is coated, place it on an oven tray lined with non stick baking paper and drizzle with rapeseed oil

5) Cook in the oven at 200 degrees for 15-20 minutes (this very much depends on the size of the chunks of fish so check them regularly), ensuring to turn the fish at least once for an even crunch.
